1 bunch of fresh kale
1 tablespoon of olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper (if you wish)
First – Heat your oven to 300 degrees. Line two baking sheets with parchment paper.
Second – Strip stems from kale by hand. Tear the leaves into bite sized pieces. Rinse and dry these kale pieces in a salad spinner or pat dry with a towel.
Third – In a large bowl, combine the kale, oil, salt, black pepper, and, if desired, cayenne pepper. Mix everything together by hand until the kale is evenly coated. Arrange the kale in a single layer on the prepared baking sheets. Bake for 20 minutes. Stir gently. Bake for 2-4 minutes more, or as needed until they are dry and crisp.
